step 1 Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
step 2 In a bowl, toss chicken pieces with olive oil, garlic powder, paprika, salt, and pepper. Set aside to marinate briefly.
step 3 Toss quartered baby potatoes with olive oil, garlic powder, salt, and pepper. Spread on one side of the baking sheet.
step 4 Toss carrots with a bit of olive oil, salt, and pepper and add them to the baking sheet with the potatoes.
step 5 Roast for 15 minutes, then add seasoned chicken pieces to the sheet. Continue roasting for another 20-25 minutes or until the chicken is cooked through and potatoes are tender and golden.
step 6 Steam or blanch the broccoli florets until just tender, about 4-5 minutes. Drain and season lightly with salt.
step 7 Combine roasted chicken, potatoes, carrots, and steamed broccoli in meal prep containers or serve immediately.
Storage and Reheating Tips
Store in airtight containers in the refrigerator for up to 4 days. Reheat in the microwave or in the oven at 350°F (175°C) until warmed through. For best texture, reheat uncovered in the oven to maintain crispness of potatoes.
