Instructions:
Step 1: In a bowl, whisk together olive oil, lime juice, chipotle chili powder, garlic powder, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
Step 2: Grill chicken over medium-high heat for 5–7 minutes on each side or until fully cooked. Let rest for 5 minutes, then dice into bite-sized pieces.
Step 3: In a mixing bowl, combine diced chicken, chipotle ranch dressing, cilantro, tomatoes, red onion, and jalapeños if using.
Step 4: Warm the flour tortillas in a skillet or microwave until pliable. Layer with shredded lettuce and cheese, then add the chicken mixture.
Step 5: Roll up the burritos, folding in the sides and rolling tightly. Grill or sear the wrapped burritos in a dry skillet for 1–2 minutes on each side until golden and slightly crispy.
Storage Information:
Store wrapped burritos in the refrigerator for up to 3 days. Reheat in a skillet or microwave until warmed through before serving.
