Chocolate Chip Cookie Dough Cheesecake Bars

Instructions

Step 1 Preheat the oven to 175°C (350°F) and line a baking pan with parchment paper.
Step 2 In a bowl, mix flour, baking soda, and salt.
Step 3 In another bowl, whisk melted butter, brown sugar, and granulated sugar until smooth.
Step 4 Add eggs and vanilla extract, mixing well.
Step 5 Gradually add dry ingredients and fold in chocolate chunks to form the cookie dough.
Step 6 Press half of the cookie dough evenly into the prepared pan to form the base.
Step 7 In a separate bowl, beat cream cheese and sugar until smooth.
Step 8 Add eggs one at a time, then mix in vanilla extract and heavy cream until creamy.
Step 9 Fold in chopped chocolate or cookie pieces into the cheesecake mixture.
Step 10 Pour the cheesecake layer over the cookie dough base and spread evenly.
Step 11 Drop spoonfuls of the remaining cookie dough on top.
Step 12 Bake for 35–40 minutes or until the center is set but slightly soft.
Step 13 Allow to cool completely, then refrigerate for at least 2 hours before slicing.

Storage and Reheating Tips

Store bars in an airtight container in the refrigerator for up to 5 days. For best texture, let them sit at room temperature for a few minutes before serving. These bars can also be frozen for up to 2 months; thaw in the refrigerator before enjoying.
