Instructions
Step 1: In a mixing bowl, combine the chocolate chip cookie crumbs and melted butter. Press the mixture into the bottom of a springform pan. Freeze for 15 minutes.
Step 2: Spread a layer of softened vanilla or chocolate ice cream over the cookie crust. Smooth the top and freeze for 1 hour.
Step 3: While the first ice cream layer sets, make the edible cookie dough by creaming together butter, sugars, milk, and vanilla. Mix in flour and mini chocolate chips. Roll small balls and freeze.
Step 4: Once the first ice cream layer is firm, scatter the frozen cookie dough balls over it. Then add the layer of cookie dough ice cream. Smooth the top and freeze overnight or until solid.
Step 5: Before serving, decorate the top with scoops of cookie dough ice cream, large chocolate chips, mini chocolate chips, and cookie crumbs.
Storage Information
Store the Chocolate Chip Cookie Dough Ice Cream Cake in the freezer, covered tightly with plastic wrap or in an airtight container, for up to 1 week. Let it sit at room temperature for 5-10 minutes before slicing for easier serving.
