Chocolate Chip Loaf Cake with Chocolate Glaze

Instructions

Step 1 Preheat your oven to 175°C (350°F) and grease or line a loaf pan with parchment paper.
Step 2 In a bowl, whisk together flour, baking powder, baking soda, and salt.
Step 3 In another bowl, cream the butter and sugar together until light and fluffy.
Step 4 Add eggs one at a time, beating well after each addition, then mix in the vanilla extract.
Step 5 Stir in the sour cream and milk until well combined.
Step 6 Gradually add the dry ingredients to the wet mixture and mix until just combined.
Step 7 Fold in the chocolate chips evenly throughout the batter.
Step 8 Pour the batter into the prepared loaf pan and smooth the top.
Step 9 Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
Step 10 Allow the cake to cool completely before removing from the pan.
Step 11 For the glaze, heat the cream until warm and pour over the chocolate chips, then stir until smooth.
Step 12 Spread the chocolate glaze over the cooled cake, let it set, then slice and serve.

Storage and Reheating Tips

Store the cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days. To enjoy warm, microwave slices for a few seconds. The cake can also be frozen (without glaze) for up to 2 months; thaw and glaze before serving.
