Step 5: In a microwave-safe bowl, melt the milk chocolate chips with the coconut oil in 20-second intervals, stirring until smooth.
Step 6: Dip each chilled cheesecake bite into the melted chocolate, coating completely.
Step 7: Place the coated bites back onto the parchment-lined tray.
Step 8: Refrigerate or freeze until the chocolate shell is fully set.
