Step 1: Line a baking sheet with parchment paper.
Step 2: Slice the bananas into evenly thick rounds and set aside.
Step 3: Spread a small amount of peanut butter onto one banana slice and top with another slice to create a sandwich. Repeat with remaining banana slices.
Step 4: Place the banana sandwiches on the prepared baking sheet and freeze for about 20–30 minutes until firm.
Step 5: In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second intervals, stirring between each, until smooth.
Step 6: Dip each frozen banana bite halfway or fully into the melted chocolate, allowing excess chocolate to drip off.
Step 7: Place the coated bites back onto the parchment-lined sheet and sprinkle with sea salt if desired.
Step 8: Freeze again for 10–15 minutes until the chocolate is set.
Step 9: Serve immediately or store for later.

Storage and Reheating Tips

Store the banana bites in an airtight container in the freezer for up to 2 weeks.
Allow them to sit at room temperature for 2–3 minutes before eating for the best texture.
Do not refrigerate for long periods as the bananas may become mushy.
