Step 1 Line a baking pan with parchment paper.

Step 2 In a saucepan over medium heat, combine butter, honey (or corn syrup), and sugar. Stir until melted and smooth.

Step 3 Remove from heat and stir in peanut butter and vanilla extract until fully combined.

Step 4 Add crispy rice cereal and mix until evenly coated.

Step 5 Press the mixture firmly into the prepared pan.

Step 6 Melt chocolate chips with coconut oil in the microwave or over a double boiler until smooth.

Step 7 Spread the melted chocolate evenly over the top.

Step 8 Refrigerate for 1–2 hours or until set.

Step 9 Cut into squares and serve.
Storage and Reheating Tips
Store bars in an airtight container at room temperature for up to 5 days or refrigerate for up to 1 week. For longer storage, freeze for up to 2 months. Let sit at room temperature before serving for best texture.
