Step 1 In a bowl, mix peanut butter and softened butter until smooth.
/nStep 2 Add powdered sugar and vanilla extract, mixing until a thick dough forms.
/nStep 3 Roll the mixture into small balls and place them on a lined baking sheet.
/nStep 4 Freeze the balls for 20–30 minutes until firm.
/nStep 5 Melt the chocolate chips with coconut oil in the microwave in 30-second intervals, stirring until smooth.
/nStep 6 Dip each peanut butter ball into the melted chocolate, coating completely.
/nStep 7 Place the coated truffles back onto the lined sheet and allow the chocolate to set.
/nStep 8 Refrigerate until firm, then serve.
Storage and Reheating Tips
Store truffles in an airtight container in the refrigerator for up to 2 weeks. They can also be frozen for up to 2 months. Serve chilled or let sit at room temperature for a few minutes before enjoying.
