Instructions:
Step 1: In a small bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth. Spread onto 4 slices of brioche and top with the remaining slices to make sandwiches.
Step 2: In a shallow bowl, whisk together eggs, milk, vanilla extract, and salt.
Step 3: Heat a skillet over medium heat and melt butter. Dip each sandwich into the egg mixture, coating both sides.
Step 4: Cook sandwiches for 3–4 minutes per side until golden brown and cooked through.
Step 5: Mix cinnamon and sugar in a shallow plate. Immediately coat the hot French toast in the cinnamon sugar mixture.
Step 6: Serve warm with maple syrup, whipped cream, or fresh fruit as desired.
