Instructions:
step 1 Flatten each slice of bread with a rolling pin until thin.
step 2 In a small bowl, mix the granulated sugar and cinnamon.
step 3 Brush each slice of flattened bread with melted butter (reserving some for frying), then sprinkle generously with the cinnamon sugar mixture.
step 4 Roll each slice tightly into a log.
step 5 In another bowl, whisk together eggs, milk, and vanilla extract.
step 6 Heat a skillet over medium heat and melt the remaining butter.
step 7 Dip each roll-up in the egg mixture, coating all sides.
step 8 Place the roll-ups seam side down in the skillet and cook, turning until all sides are golden brown.
step 9 Remove from skillet and dust with powdered sugar.
step 10 Serve warm with maple syrup if desired.
Storage and Reheating Tips:
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over low heat or in a toaster oven to regain crispiness. Avoid microwaving as it may make the roll-ups soggy.
