Ingredients
1.5 kg beef topside or silverside joint
1 tbsp olive oil
Salt and freshly ground black pepper
1.2 kg Maris Piper potatoes, peeled and halved
4 large carrots, peeled and halved lengthways
4 parsnips, peeled and halved lengthways
2 tbsp vegetable oil (for roasting)
200 g Brussels sprouts, trimmed
200 g cauliflower florets
200 g savoy cabbage, chopped
1 pack sage and onion stuffing mix (prepared according to packet instructions)
For the Yorkshire puddings:
140 g plain flour
4 eggs
200 ml milk
Sunflower oil for the tin
For the gravy:
2 tbsp beef drippings or butter
2 tbsp plain flour
500 ml beef stock
1 tsp Worcestershire sauce
