Instructions
step 1 Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
step 2 In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, dried rosemary, salt, and pepper until evenly coated.
step 3 Spread the potatoes on the baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through, until golden brown and crispy.
step 4 While the potatoes are roasting, heat a skillet over medium heat and cook the steak patties for about 4-5 minutes per side or until fully cooked and browned.
step 5 In a bowl, whisk the eggs with the milk until well combined.
step 6 Melt the butter in a nonstick skillet over medium-low heat. Pour in the egg mixture and cook, stirring gently, until the eggs are soft and fluffy.
step 7 Remove everything from heat and plate the scrambled eggs, steak patties, and home fries together.
step 8 Garnish the eggs with chopped fresh parsley before serving.
Storage and Reheating Tips
Store leftovers in separate airtight containers in the refrigerator for up to 3 days. To reheat, warm the steak patties and home fries in a skillet over medium heat or in the oven at 350°F for 10-15 minutes. Scrambled eggs can be gently reheated in a microwave-safe container at 50% power in 30-second intervals, stirring in between to avoid overcooking.
