Instructions
Step 1: Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom and sides of a 9-inch pie dish.
Step 2: Bake the crust for 8 minutes. Remove from oven and let cool slightly.
Step 3: In a mixing bowl, whisk together sweetened condensed milk, egg yolks, key lime juice, and lime zest until smooth and creamy.
Step 4: Pour the filling into the prepared crust and bake for 15 minutes, or until the center is set but slightly jiggly.
Step 5: Cool to room temperature, then refrigerate for at least 3 hours or overnight until fully set.
Step 6: Beat heavy cream and powdered sugar together until stiff peaks form. Pipe or spread over the chilled pie.
Step 7: Garnish with lime slices and zest before serving.
Storage Information
Store in the refrigerator covered for up to 5 days. For longer storage, freeze the pie (without whipped topping) for up to 1 month. Thaw in the fridge and top with whipped cream before serving.
