Instructions:
step 1 Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
step 2 In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, bell pepper, garlic, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix until just combined.
step 3 Shape the mixture into a loaf and place it in the prepared pan. Spread a layer of ketchup on top.
step 4 Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
step 5 While the meatloaf bakes, boil potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and pepper until smooth.
step 6 To make the gravy, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually add beef broth, whisking constantly until thickened. Season with salt and pepper.
step 7 Steam or microwave green beans and corn separately until tender. Toss each with butter and season with salt.
step 8 Plate sliced meatloaf with mashed potatoes topped with gravy, and serve with green beans and corn on the side.
Storage and Reheating Tips:
Store leftovers in airtight containers in the fridge for up to 4 days. Reheat meatloaf and sides in the microwave or oven at 350°F (175°C) until warmed through. Add a splash of broth or milk to mashed potatoes when reheating to restore creaminess.
