Classic Meatloaf Dinner with Mashed Potatoes, Gravy, Green Beans, and Corn

Instructions:
Step 1: Preheat oven to 375°F. In a large bowl, combine ground beef, pork (if using), breadcrumbs, milk, egg, onion, bell pepper, garlic, ketchup, Worcestershire sauce, salt, pepper, thyme, and paprika. Mix until just combined.
Step 2: Shape the meat mixture into a loaf and place it in a greased loaf pan or baking dish.
Step 3: In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard. Spread half of the glaze over the meatloaf.
Step 4: Bake meatloaf for 45 minutes. Remove from oven, spread remaining glaze on top, and return to oven for 15 more minutes, or until internal temperature reaches 160°F.
Step 5: While meatloaf bakes, prepare mashed potatoes. Boil cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and pepper.
Step 6: Prepare brown gravy according to packet instructions or use homemade if preferred.
Step 7: Steam or boil green beans until tender-crisp, about 5-7 minutes. Drain and toss with butter, salt, and pepper.
Step 8: Heat corn in a saucepan with butter and a pinch of salt until warm.
Step 9: Slice the meatloaf and serve with mashed potatoes topped with gravy, green beans, and corn on the side.

Storage and Reheating Tips:
Store leftovers in airtight containers in the refrigerator for up to 4 days. Reheat meatloaf and sides in the microwave or oven until heated through. Add a splash of milk to mashed potatoes before reheating to keep them creamy.
