Step 1: In a medium saucepan, bring the water and salt to a boil. Stir in grits, reduce heat to low, and cook uncovered for 20–25 minutes, stirring occasionally, until thick and creamy. Stir in cheese and butter until melted and smooth. Keep warm.

Step 2: While grits are cooking, cook chopped bacon in a large skillet over medium heat until crispy. Remove bacon and set aside, leaving about 1 tablespoon of bacon fat in the pan.

Step 3: Add diced onion to the skillet and sauté until soft, about 3–4 minutes. Add garlic and cayenne, cooking for another minute.

Step 4: Add shrimp to the skillet, season with salt and pepper, and cook for 2–3 minutes per side until pink and opaque.

Step 5: Stir in chicken broth, lemon juice, and butter. Simmer for 2–3 minutes until sauce is slightly thickened. Return bacon to the skillet and stir to combine.

Step 6: Spoon cheesy grits onto plates or bowls, top with shrimp mixture, and garnish with chopped parsley. Serve immediately.

Store leftovers in separate airtight containers for up to 2 days. Reheat grits with a splash of milk or water to restore creaminess, and gently reheat shrimp in a skillet to avoid overcooking.
