Instructions
Step 1: Boil your baby potatoes in salted water until fork-tender, about 12 to 15 minutes. Drain and set aside to cool slightly.
Step 2: While the potatoes cook, arrange fresh lettuce leaves as your bowl’s base on a large plate or shallow bowl.
Step 3: Cut your hard-boiled eggs in half and arrange them on one side of your bowl for visual appeal.
Step 4: Add the cooled potatoes to the bowl, placing them in a cluster in the center for easy grabbing.
Step 5: Arrange the halved cherry tomatoes and sliced cucumber around the other ingredients.
Step 6: Drizzle everything with olive oil, then season generously with salt and black pepper.
Step 7: Finish with a squeeze of fresh lemon juice if desired, and serve immediately.
Storage and Reheating Tips
Store components separately in airtight containers in the refrigerator for up to 4 days. Keep dressing separate until you’re ready to eat to prevent sogginess.
This bowl is best enjoyed fresh and cold, so there’s no need to reheat. Simply assemble your bowl from the fridge and enjoy it straight away for maximum crunch and flavor.
For meal prep, portion out potatoes, eggs, and vegetables into individual containers so you can quickly assemble bowls throughout the week.
