Instructions:
step 1 In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, cornstarch, water, brown sugar, sesame oil, ginger, and garlic to create the stir-fry sauce. Set aside.
step 2 Season beef strips lightly with salt and pepper.
step 3 Heat 1 tbsp of oil in a large pan or wok over high heat. Stir-fry beef strips in batches for 2-3 minutes until browned. Remove and set aside.
step 4 Add remaining oil to the pan. Stir-fry onions and bell peppers for 3-4 minutes until just tender but still crisp.
step 5 Return beef to the pan. Pour in the stir-fry sauce and toss everything together until well coated and heated through, about 2 minutes.
step 6 Garnish with sesame seeds and chopped spring onion if desired. Serve hot over rice or noodles.
