Instructions
Step 1: Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Step 2: Season chicken breasts with garlic powder, onion powder, salt, and pepper. Heat olive oil in a skillet over medium heat and sear the chicken for 2-3 minutes per side until lightly golden (they will finish cooking in the oven).
Step 3: In a bowl, whisk together cream of chicken soup, sour cream, cheddar cheese, and milk until smooth.
Step 4: Place the seared chicken breasts in the baking dish. Top evenly with broccoli florets, then pour the cheese mixture over everything.
Step 5: In a small bowl, combine crushed crackers and melted butter. Sprinkle over the casserole.
Step 6: Bake uncovered for 30-35 minutes, until the chicken is cooked through (165°F internal temperature) and the topping is golden and crisp.
Step 7: Let rest for 5 minutes before serving. Enjoy with extra steamed broccoli or mashed potatoes on the side!
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 325°F or in the microwave until warmed through.
