Instructions:
step 1 Preheat your oven to 180°C (350°F) and grease a muffin tin with butter or oil spray.
step 2 In a blender, combine eggs, cottage cheese, shredded cheese, salt, pepper, and garlic powder. Blend until smooth.
step 3 Pour the egg mixture evenly into the greased muffin cups, filling each about 3/4 full.
step 4 Sprinkle chopped chives or green onions on top of each.
step 5 Bake for 20-25 minutes, or until the egg bites are set and lightly golden on top.
step 6 Let them cool for a few minutes in the tin before removing.
step 7 Serve warm or store for later.
Storage and Reheating Tips:
Store egg bites in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for 30–45 seconds. You can also freeze them and reheat from frozen in the microwave or oven.
