Cowboy Meatloaf and Potato Casserole

Instructions:
Step 1: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Step 2: In a large bowl, mix ground beef, breadcrumbs, milk, egg, chopped onion, BBQ sauce, garlic powder, salt, and pepper until just combined.

Step 3: Press the meat mixture evenly into the prepared dish to form a meatloaf layer. Bake for 25-30 minutes or until cooked through.

Step 4: Remove from oven, spread mashed potatoes evenly over the meatloaf, and sprinkle cheddar cheese on top.

Step 5: Return to oven and bake for another 10-15 minutes until the cheese is melted and bubbly.

Step 6: Let cool slightly before slicing. Garnish with chopped parsley if desired.

Storage information:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until heated through.
