Step 1 Cook spaghetti according to package instructions until al dente, reserving 1/4 cup of pasta water before draining.
Step 2 In a large skillet over medium heat, cook chopped bacon until crispy, then remove and set aside.
Step 3 In the same skillet, melt butter and sauté garlic for about 1 minute until fragrant.
Step 4 Pour in heavy cream and bring to a gentle simmer, stirring frequently.
Step 5 Add Parmesan cheese, black pepper, salt, and nutmeg, stirring until the sauce thickens.
Step 6 Return cooked spaghetti to the skillet and toss to coat in the sauce.
Step 7 Add reserved pasta water as needed to loosen the sauce and achieve a silky consistency.
Step 8 Stir in the crispy bacon and mix well.
Step 9 Remove from heat and sprinkle with fresh parsley.
Step 10 Serve immediately while warm.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat with a splash of milk or cream to restore the sauce’s texture. Avoid overheating to prevent the sauce from separating.
