Instructions
Step 1: Cook the penne pasta according to package instructions. Drain and set aside.
Step 2: In a large skillet over medium heat, add olive oil and sauté the sliced sausage until browned, about 4-5 minutes. Remove from skillet and set aside.
Step 3: In the same skillet, sauté the chopped onion, bell peppers, and mushrooms until soft, about 5 minutes. Add garlic and cook for another minute.
Step 4: Sprinkle in the Cajun seasoning, paprika, and black pepper. Stir to coat the vegetables evenly with the spices.
Step 5: Pour in the chicken broth and bring to a simmer. Reduce heat and stir in the heavy cream. Simmer for 3-4 minutes until slightly thickened.
Step 6: Stir in the Parmesan cheese until melted and smooth.
Step 7: Return the sausage to the skillet along with the cooked pasta. Toss everything together to coat well in the sauce.
Step 8: Cook for another 2-3 minutes to heat through. Garnish with sliced green onions before serving.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave. Add a splash of cream or broth if the pasta seems dry after reheating.
