Creamy Chicken Broccoli Pasta: A Weeknight Family Favorite

Instructions

Step 1: Cook the penne pasta according to package instructions. In the last 2 minutes of cooking, add the broccoli florets to the pot. Drain and set aside.

Step 2: While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Sear the chicken for about 6-7 minutes per side, or until golden brown and fully cooked. Remove from skillet and let rest before slicing.

Step 3: In the same skillet, melt the butter. Add the garlic and sauté for about 1 minute until fragrant.

Step 4: Pour in the heavy cream and stir in the Parmesan cheese and Italian seasoning. Simmer for 2-3 minutes until the sauce thickens slightly.

Step 5: Add the drained pasta and broccoli to the skillet, tossing to coat with the sauce. Slice the chicken and place it on top of the pasta.

Step 6: Garnish with chopped parsley and serve immediately.

Storage Information

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stove with a splash of cream or milk to loosen the sauce. This dish is best enjoyed fresh but holds up well for meal prep too!
