Instructions
Step 1: Bring a large pot of salted water to a boil and cook the rotini pasta according to the package instructions until al dente.
Step 2: Drain the pasta and rinse under cold water until completely cooled.
Step 3: Transfer the cooled pasta to a large mixing bowl.
Step 4: Add the diced ham, cucumber, corn, carrots, red onion, and chopped parsley to the bowl.
Step 5: In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, salt, black pepper, and dried parsley.
Step 6: Pour the dressing over the pasta salad ingredients.
Step 7: Toss gently until everything is evenly coated in the creamy dressing.
Step 8: Cover and refrigerate the pasta salad for at least 30 minutes before serving to allow the flavors to blend.
Step 9: Stir well before serving and garnish with additional parsley if desired.
Storage and Reheating Tips
Store Creamy Ham and Vegetable Pasta Salad in an airtight container in the refrigerator for up to 4 days. Stir before serving again, as the dressing may thicken slightly while chilled. This pasta salad is best served cold and does not require reheating.
