Instructions
Step 1
Cook macaroni according to package directions. Drain and rinse with cold water. Set aside to cool.
Step 2
In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, vinegar, sugar, salt, and pepper.
Step 3
Add cooled macaroni, celery, bell pepper, red onion, hard-boiled eggs, and pickles or relish (if using). Toss until well coated.
Step 4
Cover and refrigerate for at least 1 hour to allow flavors to meld.
Step 5
Before serving, stir and adjust seasoning as needed. Garnish with chopped parsley.
Storage Information
Store in an airtight container in the refrigerator for up to 4 days. Stir before serving. Not recommended for freezing as the texture may change.
