Step 1: Preheat your oven to 375°F (190°C) and lightly grease a baking dish./nStep 2: Season the chicken breasts with salt, pepper, paprika, and Italian seasoning./nStep 3: Heat olive oil in a skillet over medium heat and sear the chicken for 3–4 minutes per side until lightly golden. Remove and set aside./nStep 4: In the same skillet, melt butter and sauté diced onion and mushrooms until softened and lightly browned./nStep 5: Add minced garlic and cook for about 1 minute until fragrant./nStep 6: Pour in chicken broth and heavy cream, stirring well. Let simmer for 3–4 minutes./nStep 7: Stir in Parmesan cheese until the sauce begins to thicken.
Step 8: Place the seared chicken into the prepared baking dish and pour the mushroom sauce over the top./nStep 9: Sprinkle mozzarella cheese evenly over the chicken./nStep 10: Bake for 20–25 minutes or until the chicken is fully cooked and the top is bubbly and golden./nStep 11: Garnish with fresh parsley and serve warm.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. Add a splash of cream or broth if needed to loosen the sauce while reheating.
