Instructions:
step 1 Boil the cubed potatoes in salted water until fork-tender, about 10–12 minutes. Drain and let cool completely.
step 2 In a large bowl, combine cooled potatoes, cucumber, bell pepper, carrot, red onion, and sausage or ham if using.
step 3 In a separate bowl, whisk together mayonnaise, yogurt or sour cream, mustard, vinegar or lemon juice, garlic powder, paprika, salt, and pepper.
step 4 Pour the dressing over the potato mixture and gently mix until evenly coated.
step 5 Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
step 6 Taste and adjust seasoning if needed before serving.
Storage and Reheating Tips:
Store the salad in an airtight container in the refrigerator for up to 3 days. Best served cold. Not recommended for freezing. Stir gently before serving if it has been chilled for a long time.
