Instructions
Step 1: Bring a large pot of salted water to a boil and cook the rotini pasta until tender according to package instructions.
Step 2: Drain the pasta and rinse under cold water to cool completely.
Step 3: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, cheddar cheese, red onion, bacon, and parsley.
Step 4: In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, onion powder, dried parsley, salt, black pepper, and milk until smooth.
Step 5: Pour the dressing over the pasta mixture and toss until evenly coated.
Step 6: Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend.
Step 7: Garnish with additional parsley or bacon before serving if desired.
Storage and Reheating Tips
Store pasta salad in an airtight container in the refrigerator for up to 4 days.
Stir before serving, as the dressing may thicken after chilling.
Add a splash of milk or a spoonful of mayonnaise if needed to refresh the creamy texture.
This pasta salad is best served cold and does not require reheating.
