Creamy Rotel Pasta with Sausage

Instructions

Step 1: Cook pasta according to package directions until al dente. Drain and set aside.

Step 2: In a large skillet, heat olive oil over medium heat. Add chopped onion and cook for 3-4 minutes until softened. Stir in garlic and cook for 1 minute.

Step 3: Add ground sausage to the skillet. Cook until browned and cooked through, breaking it up with a spoon.

Step 4: Stir in the Rotel tomatoes and simmer for 2-3 minutes. Add cream cheese and stir until melted and well incorporated.

Step 5: Pour in the heavy cream and bring to a simmer. Stir in shredded cheddar until melted. Season with salt and pepper.

Step 6: Add the cooked pasta to the skillet and toss until evenly coated in the sauce.

Step 7: Garnish with fresh parsley and serve hot.

Storage Information
