Instructions

Step 1: Season salmon fillets with olive oil, paprika, salt, and pepper. In a large skillet over medium-high heat, sear salmon for 3-4 minutes per side or until golden and cooked through. Remove and set aside.

Step 2: In the same skillet, melt butter and sauté garlic for 1 minute until fragrant. Stir in orzo and toast for 1-2 minutes.

Step 3: Pour in broth, bring to a boil, then reduce heat and simmer, stirring occasionally, until orzo is tender and most liquid is absorbed (10-12 minutes).

Step 4: Stir in spinach, roasted red peppers, heavy cream, Parmesan, and lemon juice. Cook until spinach wilts and sauce is creamy.

Step 5: Return salmon to the skillet and nestle into the orzo. Warm for 2-3 minutes. Garnish with fresh herbs if desired and serve hot.

Storage Information

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or cream to loosen the sauce if needed.
