Instructions:
Step 1 Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top. Lightly grease the rack.
Step 2 Pat chicken drumsticks dry with paper towels. In a bowl, toss them with olive oil, salt, pepper, garlic powder, onion powder, paprika, and thyme until evenly coated.
Step 3 Arrange the drumsticks on the prepared rack. Bake for 35-45 minutes, flipping once halfway through, until skin is golden and crispy and internal temperature reaches 165°F (74°C).
Step 4 While chicken is baking, boil potatoes in salted water until fork tender, about 15-20 minutes. Drain and mash with butter and warm milk. Stir in shredded cheddar cheese and season with salt and pepper.
Step 5 Steam or sauté broccoli in olive oil or butter for 5-7 minutes until tender. Season with salt and pepper.
Step 6 Plate the crispy baked drumsticks with a generous scoop of cheesy mashed potatoes and a side of broccoli.
Storage and Reheating Tips:
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat drumsticks in the oven or air fryer to maintain crispiness. Mashed potatoes and broccoli can be reheated in the microwave or on the stovetop.
