Instructions
Step 1: Pat shrimp dry and chop into small pieces, then combine with cream cheese, mozzarella, red bell pepper, garlic, soy sauce, sesame oil, ginger, and green onions in a bowl. Season with salt and pepper.
Step 2: Lay out a wonton wrapper and place about 2 tablespoons of the shrimp mixture in the center, leaving space around the edges.
Step 3: Wet the edges of the wrapper with water, then fold and roll tightly to create a cylinder shape, sealing all edges completely.
Step 4: Heat oil to 350°F in a deep pot or skillet. Fry the rolls in batches for 2-3 minutes per side until golden brown and crispy.
Step 5: Transfer to a paper towel-lined plate to drain excess oil, then garnish generously with fresh green onions while still warm.
Step 6: Serve immediately with sweet chili sauce, soy sauce, or your favorite dipping sauce.
Storage and Reheating Tips
Store cooled shrimp rolls in an airtight container in the refrigerator for up to 3 days. They also freeze beautifully for up to a month before frying.
To reheat, place frozen or thawed rolls on a baking sheet and bake at 375°F for 8-10 minutes until heated through and crispy again. Skip the deep fryer reheating to avoid them becoming too greasy.
For best results, prepare the filling ahead and assemble the rolls just before frying. This keeps the wrappers from getting soggy and ensures maximum crispiness.
