Instructions
Step 1: Make the pastry dough by combining flour and salt in a large bowl. Cut in cold butter until the mixture resembles coarse crumbs, then add ice water one tablespoon at a time until the dough just comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
Step 2: While the dough chills, prepare the filling. Chop the shrimp into bite-sized pieces and combine with both cheeses, garlic, chives, and parsley in a bowl. Season with salt and pepper to taste.
Step 3: Preheat your oven to 400 degrees Fahrenheit and line baking sheets with parchment paper.
Step 4: Roll out the chilled dough to 1/8-inch thickness on a floured surface. Cut into 4-inch squares using a knife or pastry cutter.
Step 5: Place 2 tablespoons of the shrimp filling on one half of each square, leaving a 1/2-inch border. Fold the dough over to create a triangle and press the edges firmly to seal. Use a fork to crimp the edges for extra seal.
Step 6: Mix the egg yolk with water and brush over each turnover. Sprinkle with fresh herbs if desired.
Step 7: Bake for 18 to 20 minutes until golden brown and crispy. Serve warm and enjoy immediately.
Storage and Reheating Tips
Store cooled turnovers in an airtight container in the refrigerator for up to 3 days. You can also freeze them on a baking sheet before transferring to a freezer bag for up to 2 months.
Reheat refrigerated turnovers in a 375-degree oven for 8 to 10 minutes until warmed through. For frozen turnovers, bake at 375 degrees for 15 to 18 minutes without thawing.
For the crispiest results, avoid using the microwave, as it tends to soften the pastry. The oven method will restore that delicious crispy exterior.
