step 1 Pat fish fillets dry with paper towels.
step 2 In a bowl, mix flour, cornstarch, salt, pepper, paprika, and garlic powder.
step 3 In another bowl, whisk together eggs and milk.
step 4 Dip each fish fillet into the egg mixture, then coat in the flour mixture.
step 5 Heat vegetable oil in a skillet or deep fryer to 350°F (175°C).
step 6 Fry fish in batches for 3–5 minutes per side until golden brown and crispy.
step 7 Remove and place on paper towels to drain excess oil.
step 8 Serve hot with lemon wedges or your favorite dipping sauce.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 375°F (190°C) or air fryer to restore crispiness. Avoid microwaving to keep the coating crispy.
