Step 1 In a large bowl, combine mashed potatoes, mozzarella cheese, Parmesan cheese, parsley, garlic powder, salt, and black pepper.
Step 2 Mix well until the ingredients are fully incorporated.
Step 3 Take small portions of the mixture and shape them into triangles or cones.
Step 4 Place flour, beaten egg, and breadcrumbs into separate bowls.
Step 5 Coat each croquette first in flour, then dip into egg, and finally coat with breadcrumbs.
Step 6 Heat oil in a deep pan over medium heat.
Step 7 Fry the croquettes in batches until golden brown and crispy on all sides.
Step 8 Remove and place on paper towels to drain excess oil.
Step 9 Serve hot with your favorite dipping sauce.

Storage and Reheating Tips

Store leftover croquettes in an airtight container in the refrigerator for up to 3 days. Reheat in an oven or air fryer at 180°C (350°F) until heated through and crispy. Avoid microwaving as it may make them soggy. Croquettes can also be frozen before frying for up to 1 month.
