Instructions
Step 1: Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
Step 2: In a large skillet over medium heat, sauté diced onion until soft, about 3-4 minutes. Add garlic and cook for another minute.
Step 3: Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess grease.
Step 4: Stir in beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Let simmer for 5-7 minutes until thickened slightly.
Step 5: Spread the chili mixture evenly into the prepared baking dish. Sprinkle 1 cup of the shredded cheese over the top.
Step 6: Arrange frozen tater tots in a single layer over the cheese.
Step 7: Bake uncovered for 30-35 minutes or until the tots are golden and crispy.
Step 8: Sprinkle remaining cheese on top and return to oven for 5 more minutes, until melted.
Step 9: Garnish with chopped parsley or green onions if desired, and serve hot.
Storage Information
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to retain the crispiness of the tots. This casserole can also be assembled in advance and stored covered in the fridge for up to 24 hours before baking.
