Instructions
Step 1: Place the beef stew meat in the crockpot and season with salt and black pepper.
Step 2: Add the diced onion and minced garlic on top of the beef.
Step 3: Pour in the beef broth and Worcestershire sauce, then sprinkle the onion soup mix over everything.
Step 4: Cover and cook on low for 6–8 hours or on high for 3–4 hours until the beef is tender.
Step 5: In a small bowl, mix the cornstarch and water to create a slurry, then stir it into the crockpot to thicken the gravy.
Step 6: Cook for an additional 15–20 minutes until the sauce thickens.
Step 7: Meanwhile, cook the egg noodles according to package instructions, then drain and toss with butter.
Step 8: Serve the beef tips and gravy over the warm noodles and garnish with fresh parsley if desired.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3–4 days. To reheat, warm gently on the stovetop or in the microwave, adding a splash of beef broth if needed to loosen the sauce. For longer storage, freeze the beef tips (without noodles) for up to 2 months and prepare fresh noodles when ready to serve.
