Croissant Breakfast Plate with Eggs, Potatoes & Sausage

Instructions

Step 1: Heat olive oil in a large skillet over medium-high heat. Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until golden and crispy. Season with paprika, salt, and pepper. Transfer to your serving plate and sprinkle with fresh parsley.

Step 2: In the same skillet, cook the breakfast sausages over medium heat for 5-7 minutes, turning occasionally, until browned and cooked through. Place them on your plate alongside the potatoes.

Step 3: Add butter to the skillet and crack both eggs into the pan. Cook to your preferred doneness, sunny-side up or over easy works best. Season lightly with salt and pepper.

Step 4: Warm your croissant in the oven at 350°F for 3-4 minutes, or enjoy it at room temperature. Arrange it on your plate.

Step 5: Place the cooked eggs on the plate and garnish everything with remaining fresh parsley. Serve immediately while everything is warm.

Storage and Reheating Tips

This breakfast plate is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.

To reheat, place the potatoes and sausages in a skillet over medium heat for 3-4 minutes until warmed through. Reheat eggs gently or simply enjoy them cold. The croissant is best enjoyed fresh or lightly warmed in a 300°F oven for 2-3 minutes.

For meal prep, cook the potatoes and sausages ahead of time and store separately from eggs and the croissant for best results.
