Instructions
Step 1: Rub the chicken breasts with Cajun seasoning on all sides.
Step 2: In a large skillet over medium heat, add olive oil. Sear the chicken for 4–5 minutes on each side until browned and mostly cooked through. Remove and set aside.
Step 3: In the same skillet, add diced onion and bell peppers. Cook for 3–4 minutes until softened.
Step 4: Add minced garlic and sauté for 30 seconds.
Step 5: Stir in the rice and toast it for 1 minute.
Step 6: Pour in the chicken broth, season with salt and pepper, and bring to a simmer.
Step 7: Return the chicken to the skillet, nestling it into the rice. Cover and simmer on low heat for 20–25 minutes until the rice is tender and the chicken is fully cooked.
Step 8: Remove from heat, garnish with fresh parsley, and serve hot.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or in a covered skillet with a splash of broth to keep the rice moist.
