Instructions:
Step 1: Rinse the rice under cold water until the water runs clear. Drain well.
Step 2: In a medium saucepan, combine rice, water, olive oil or butter, and salt. Bring to a boil over medium-high heat.
Step 3: Once boiling, reduce heat to low, cover, and simmer for 15–18 minutes, or until rice is tender and liquid is absorbed.
Step 4: Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
Step 5: Stir in lime juice, lime zest, and chopped cilantro. Adjust seasoning to taste.
Step 6: Serve warm, garnished with lime wedges.
Storage Information:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop with a splash of water to restore moisture. Not recommended for freezing, as the texture may change.
