Fiesta Lime Chicken with Avocado Salsa

Instructions:

Step 1: In a bowl, whisk together lime juice, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper.

Step 2: Place chicken breasts in a zip-top bag or shallow dish and pour marinade over them. Let marinate in the refrigerator for at least 30 minutes or up to 2 hours.

Step 3: While the chicken marinates, prepare the avocado salsa by gently mixing avocados, tomatoes, red onion, cilantro, lime juice, and salt in a bowl. Set aside.

Step 4: Preheat a grill or skillet over medium-high heat. Grill chicken for 6–7 minutes per side or until fully cooked and lightly charred.

Step 5: Remove chicken from heat and let rest for a few minutes before topping with avocado salsa.

Step 6: Serve with lime wedges and additional cilantro if desired.

Storage Information:

Store grilled chicken in an airtight container in the refrigerator for up to 4 days. Keep avocado salsa separate and refrigerate for up to 2 days, though it’s best served fresh. Reheat chicken gently and top with salsa just before serving.
