Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.
Step 2: In a large bowl, cream the softened butter and sugar together until pale and fluffy, about 3-5 minutes.
Step 3: Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 4: In a separate bowl, whisk together flour, baking powder, and salt.
Step 5: Add the dry ingredients to the wet mixture in two batches, alternating with milk. Begin and end with flour. Mix just until combined.
Step 6: Pour batter into the prepared loaf pan and smooth the top. Optionally score the top with a sharp knife for even rise.
Step 7: Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean. If browning too quickly, cover with foil halfway through.
Step 8: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Storage Information
Wrap the cooled loaf in plastic wrap or store in an airtight container at room temperature for up to 4 days. For longer storage, refrigerate up to 1 week or freeze slices individually wrapped for up to 2 months.
