French Macarons

Instructions

Step 1 Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
Step 2 Sift together almond flour and powdered sugar into a bowl to remove lumps.
Step 3 In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar and continue beating until stiff peaks form.
Step 4 Add vanilla extract and food coloring, mixing gently.
Step 5 Fold the dry ingredients into the egg whites in batches until the batter flows like lava.
Step 6 Transfer the batter into a piping bag and pipe small circles onto the prepared baking sheets.
Step 7 Tap the baking sheets on the counter to release air bubbles and let them sit for 30–60 minutes until a skin forms.
Step 8 Bake for 15–18 minutes, then allow them to cool completely before removing from the parchment.
Step 9 Prepare the filling by beating butter, powdered sugar, vanilla extract, and heavy cream until smooth.
Step 10 Pair similar-sized shells and pipe filling onto one side, then sandwich with another shell.

Storage and Reheating Tips

Store macarons in an airtight container in the refrigerator for up to 5 days. For best texture and flavor, allow them to come to room temperature before serving. Macarons can also be frozen for up to 2 months; thaw in the refrigerator overnight before enjoying. Avoid reheating, as this can alter their delicate texture.
