Instructions
Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Step 2: In a large bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, and mozzarella cheese. Season with salt and pepper to taste.
Step 3: Spread the mixture evenly into the prepared baking dish.
Step 4: Bake uncovered for 25-30 minutes, until hot and bubbly.
Step 5: Remove the casserole from the oven, sprinkle crispy fried onions evenly over the top, and return to the oven for an additional 5-10 minutes until the onions are golden and crisp.
Step 6: Garnish with chopped fresh parsley if desired, and serve warm.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) or microwave until heated through. For best texture, add fresh fried onions when reheating.
