French Onion Meatloaf

Instructions

Step 1: Preheat oven to 180°C (350°F) and grease a loaf pan or line a baking dish.

Step 2: In a bowl, mix ground beef, breadcrumbs, milk, egg, chopped onion, garlic, Worcestershire sauce, salt, pepper, and thyme until combined.

Step 3: Shape the mixture into a loaf and place in the prepared pan.

Step 4: Bake for 40–45 minutes until mostly cooked through.

Step 5: While the meatloaf bakes, heat butter and olive oil in a skillet over medium heat.

Step 6: Add sliced onions and sugar, cooking slowly for 20–25 minutes until deeply caramelized.

Step 7: Stir in beef broth and simmer for a few minutes until slightly reduced.

Step 8: Remove meatloaf from oven, top with caramelized onions and shredded cheese.

Step 9: Return to oven and bake for another 10–15 minutes until cheese is melted and bubbly.

Step 10: Let rest for a few minutes before slicing and serving.

Storage and Reheating Tips

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until warmed through. This meatloaf can also be frozen for up to 2 months; thaw overnight in the refrigerator before reheating.
