Instructions:

Step 1: Heat butter and olive oil in a large skillet over medium-low heat. Add the onions and salt, and cook, stirring occasionally, until deeply caramelized, about 25–30 minutes. Set aside.

Step 2: In a bowl, mix ground beef with garlic powder and black pepper. Shape into 4 thin patties roughly the size of your bread slices.

Step 3: Cook patties in a skillet over medium heat for 3–4 minutes per side, until browned and cooked through. Remove from skillet.

Step 4: Wipe out the skillet and reduce heat to medium-low. Spread mayonnaise or butter on one side of each bread slice.

Step 5: Assemble each melt: Place one slice of bread, mayo-side down, in the skillet. Top with one slice of Swiss, a beef patty, a spoonful of caramelized onions, one slice of provolone, and a second slice of bread (mayo-side up).
