Instructions
Step 1: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Step 2: In another bowl, mix the milk, egg, melted butter, and vanilla extract.
Step 3: Pour the wet ingredients into the dry ingredients and stir until just combined.
Step 4: Heat a lightly greased skillet or griddle over medium heat.
Step 5: Pour pancake batter onto the skillet to form large round pancakes.
Step 6: Cook for 2 to 3 minutes until bubbles form on the surface, then flip and cook the other side until golden brown.
Step 7: Arrange banana slices near the top of each pancake to create eyes.
Step 8: Place blueberries in the center of the banana slices for pupils.
Step 9: Use chocolate syrup or melted chocolate to draw smiling mouths on the pancakes.
Step 10: Serve warm with syrup, extra fruit, or whipped cream if desired.
Storage and Reheating Tips
Store leftover pancakes in an airtight container in the refrigerator for up to 3 days.
Reheat in the microwave for 20 to 30 seconds or warm them in a skillet.
You can freeze pancakes in layers separated by parchment paper for up to 2 months.
