Instructions
Step 1: Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat until the butter is foaming.
Step 2: Add the minced garlic and red pepper flakes, stirring constantly for about 30 seconds until fragrant.
Step 3: Season the shrimp with salt and pepper, then add them to the skillet in a single layer. Cook for 2 minutes without moving them.
Step 4: Flip the shrimp and cook for another 2 minutes until they begin to turn pink.
Step 5: Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the pan.
Step 6: Reduce heat to medium and whisk in the remaining 4 tablespoons of butter until fully incorporated and the sauce is silky.
Step 7: Cook for 1-2 minutes more until the shrimp are fully opaque and cooked through.
Step 8: Remove from heat and stir in the fresh parsley and chives. Taste and adjust seasonings as needed.
Storage and Reheating Tips
Store leftover Garlic Butter Shrimp Scampi in an airtight container in the refrigerator for up to 2 days. This dish is best enjoyed fresh, but refrigerated leftovers can be gently reheated on the stovetop over low heat with a splash of water or wine to restore the sauce.
Avoid microwaving, as this can cause the shrimp to become rubbery. If you’d like to prepare ahead, cook the shrimp and sauce separately, then combine and reheat gently just before serving for optimal texture.
This dish does not freeze well due to the delicate texture of the shrimp, so plan to enjoy it within 2 days for the best results.
